试验通过研究营养膏的加热方式及温度条件、肉类添加比例乳化剂的种类和添加量、原料粉碎粒度等对营养膏制作的形成及感官评分的影响。结果表明,肉类制品中鱼肉和鸡肉粉比例应为5:3,且应在加入乳化剂之前进行添加。乳化剂中羧甲基纤维素钠和海藻酸钠的比例为3:2,山楂、炒麦芽和肉类制品等不溶于水的固体原料需要经过粉碎且过80目样品筛,以水浴加热方式且温度为60℃制作的犬猫营养膏在风味、口感、外形、硬度与粘度方面为最佳。该营养膏可为犬猫在绝育后补充营养,有助于绝育术后的伤口愈合,减少犬猫的痛苦,助力犬猫健康成长。该营养膏制备工艺简单,稳定性良好,具有一定的实用性,同时为犬猫绝育术后营养膏的制备与研究提供一定的参考依据。
The Preparation of a Post-neutering Nutrition Cream for Dogs and Cats
The experiment was conducted to study the effects of heating method and temperature conditions of the nutritional paste,the addition of food-inducing agents,the dissolution method of water-soluble substances,the type and amount of emulsifiers added,and the crushing granularity of raw materials on the formation of the nutritional paste and the sensory scores of the nutritional cream production.The results showed that the ratio of fish and chicken meal in meat products should be 5:3 and should be added before adding emulsifiers.The ratio of sodium carboxymethyl cellulose and sodium alginate in the emulsifier was 3:2,and water-insoluble solids such as hawthorn,fried malt and meat products should be crushed and sieved through an 80-mesh sieve,so that the canine and feline nutritional creams produced by heating in a water bath at a temperature of 60℃had the best flavors,textures,shapes,hardnesses and viscosities.The development of post-neutering nutritional cream can supplement the nutrition for dogs and cats after sterilization,which can help the wound healing after sterilization,reduce the pain of dogs and cats,and help dogs and cats grow up healthily.This nutritional cream has a simple preparation process,good stability and practicality,and provides a certain reference for the preparation and research of post-neutering nutritional paste for dogs and cats.
