Cow's milk,eggs and milk,egg products are rich in protein,vitamins and minerals,are common foods in people's diet structure,While providing rich nutrients for human beings,it is also easy to cause allergies in some people.In view of the current situation of allergy and the status quo of allergen detection technology,the main allergic proteins and enzymes in milk and eggs were briefly reviewed.The common detection methods of allergens were introduced in this paper,and the advantages and disadvantages of each detection method were compared to provide theoretical basis and guidance for the detection of milk and egg allergens.
