Comparative Study on Meat Quality Traits of Qianbei Brown Goat at Different Ages
In order to investigate the meat quality characteristics of Qianbei Brown Goat at different ages,the meat quality of Qianbei Brown Goat aged 4 months,1.5 years and 2.5 years was analyzed.The results of this study showed that there were no significant differences in meat color,pH,water loss rate,shear force,cooked meat rate,marbled grain content among Qianbei Brown Goat at different ages.Crude protein content and crude fat content increased with age.The crude protein content and crude fat content of Qianbei Brown Goat at 2.5 years old were significantly higher than those at 4 months old.The 2.5-year-old Qianbei Brown goat has good meat quality and rich flavor.
