摘要
目的:分析评价各类食品中铬的含量分布,为食品安全风险监测和科学合理膳食提供依据。方法按照全国食品安全风险监测实施方案和相关标准,对当地农贸市场及超市采集的酸奶、雪糕、肉冻(糕)、复合蛋白饮料、糖果、灌汤包等样品,微波消解石墨炉原子吸收法测定其中的铬含量。结果本次共分析11类食品,84份食品,其中4份样品中铬超标,超标率为4.76%。超标样品均为自制肉冻(糕),5份自制肉冻(糕)铬仅有1份合格。结论农贸市场上出售的自制肉制品质量堪忧,相关部门应加大监督管理的力度,切实保障食品安全工作落到实处。
Abstract
Objective The distribution of chromium content in all kinds of food is analyzed and evaluated in order to provide the basis for the food safety risk moni-toring and scientific reasonable diet.Methods According to the implementation plan and the related standards of the national food safety risk monitoring ,the chromium contents of yogurt,ice cream,acquisition of jellied meat(cake),compound protein beverage,candy and dumpling samples,which are gathered from the open fair and su-permarket,have been determined by microwave digestion-GFAAS method.Results 11 categories of food including 84 food samples have been analyzed and 4 samples exceed the chromium standard.The reject ratio is 4.76%.Ungraded samples are all homemade jellied meat(cake),and only one is below the level among five samples. Conclusion The quality of homemade meat products in the open fair is gloomy .Consequently,the relevant departments should strengthen supervision and management to ensure the food safety task.
