Evaluation of Exposure Risk of Deoxynivalenol in Wheat and Its Products in Shandong Province
To evaluate the exposure risk of deoxynivalenol in dietary wheat and its products in Shandong province,this paper calculates the pollution level of deoxynivalenol in wheat and its products in Shandong province through literature review,uses the food consumption data from the food consumption survey of Chinese residents in 2015,evaluates the dietary exposure risk of deoxynivalenol in wheat and its products of residents of various age groups in Shandong province by point evaluation method,takes the acute reference dose of 8μg/(kg·BW)and provisional maximum tolerable daily intake of 1μg/(kg·BW·d)as reference values to evaluate the acute and chronic toxicity risks of exposure to deoxynivalenol among residents of different age groups.Results show that the average content of deoxynivalenol in wheat and its products is 149.18 μg/kg,with the detection rate of 79.56%and exceeding standard rate of 2.35%.99%of residents in Shandong province do not have a risk of acute poisoning when consuming deoxynivalenol from wheat and its products.At the level of P90 intake,the exposure to deoxynivalenol is higher than 1 μg/(kg·BW·d)for all age groups and the entire population,indicating a risk of chronic poisoning.The high exposure levels of deoxynivalenol in wheat and its products among high intake consumers should be of concern and reduce dietary risks.
