Effect of Perilla in Blocking Endogenous Nitrosamines by Simulated Gastric Fluid Combined with Liquid Chromatography-Mass Spectrometry
In order to study the blocking effect of vegetables on nitrosamines,the inhibitory effect of perilla extract on endogenous nitrosamines was studied by combining liquid chromatography-mass spectrometry in a simulated gastric fluid environment.The results indicated that under simulated gastric fluid environment,perilla solution and sodium nitrite were added in simulated gastric juice environment,the sodium nitrite clearance rate could reach 10.4%.Perilla solution,sodium nitrite and diethylamine were added,LC-MS/MS was performed to detect the diethylnitrosamine production of blank sample and perilla added sample at a certain concentration were 0.2 ng/mL and 0.1 ng/mL,and the inhibition rate was 50%.NDMA,NDEA,NDBA and NPYR were significantly decreased in the diet supplemented with perilla.NDMA and NDEA were detected at 0.2 ng/g in the blank diet,but were not detected in the experimental group supplemented with perilla.NDBA blank control was 0.4 ng/g,the experimental group supplemented with perilla was 0.2 ng/g,the inhibition rate was 50%,NPYR blank control was 8.6 ng/g,the experimental group supplemented with perilla was 4.9 ng/g,the inhibition rate was 43%,to provide reference for studying the blocking mechanism of perilla on nitrosamine.Therefore,perilla had a significant blocking effect on endogenous nitrosamines.
