Research Progress on Rapid Detection of Pesticide Residues in Fruits and Vegetables
Fruits and vegetables are indispensable foods in people's daily lives.Pesticide residues are the key factor affecting the quality and safety of fruits and vegetables.Excessive pesticide residues pose a threat to human health,which can lead to poisoning,digestive system diseases,and even cancer.Freshness is a crucial factor influencing the quality of fruits and vegetables,directly affecting their taste,nutritional value,and commercial value.Therefore,rapid detection technology for pesticide residues is of great significance in ensuring the quality and safety of fruits and vegetables.This article outlined the causes and hazards of pesticide residues in fruits and vegetables,systematically reviewed common rapid detection technologies for pesticide residues in fruits and vegetables,such as enzyme inhibition,enzyme-linked immunosorbent assay(ELISA),biosensor,spectroscopy,colloidal gold,and mass spectrometry.Furthermore,it summarized the advantages,disadvantages,and suitable application scenarios of these common rapid detection technologies for pesticide residues in fruits and vegetables,aiming to promote the rapid,accurate,and standardized analysis of pesticide residues.
