The Extraction Methods and Application in the Food Industry of Xylooligosaccharide
Xylooligosaccharides are a kind of functional oligosaccharides with prebiotic activity,non-toxic side effects,good stability and wide sources.Based on the research progress of xylooligosaccharides at home and abroad,the biological functional characteristics were summarized,and the extraction methods of xylooligosaccharides were summarized and analyzed.The application of xylooligosaccharides in fruit and vegetable drinks,dairy products,baked products was reviewed,in order to improve the industrial production efficiency of xylooligosaccharides and expand its application in the market.
