Research Progress on Processing and Utilization of the Pastinaca sativa L.
As a root vegetable,Pastinaca sativa L.is characterized by its low caloric content,high dietary fiber levels,significant folate and K concentrations.P.sativa L.is extensively cultivated across Europe,Asia,and North Africa,and has been grown for thousands of years.It serves as a direct raw material in food production,while its extracts can be utilized further in the manufacture of condiments,natural pigments,nutritional fortifiers,and more.However,the processing and utilization of P.sativa L.have not received adequate attention,only certain regions globally have engaged in reasonable cultivation and development practices.This paper elucidated the nutritional value and planting conditions of P.sativa L.Furthermore,it analyzed and summarized the existing state of P.sativa L.processing and utilization.Based on this analysis,future developmental directions for P.sativa L.were proposed to provide guidance for its rational development and comprehensive utilization.
