摘要
桃是一类原产于我国的优质水果,果肉厚实,汁多味美,气味芳香,深受消费者喜爱,但桃果的易腐性增加了其贮藏、流通、交易的难度.本文介绍了桃果的呼吸作用及乙烯释放、酶活性、成分与质地等采后生理变化,综述了基于物理、化学和生物三类保鲜调控技术的最新保鲜方法,提出动态化的综合调控保鲜技术是未来行业发展的主要趋势,以期探索适于桃果贮运保鲜的方法,为相关产业发展提供科学建议.
Abstract
Peach is a high-quality fruit native to China,loved by consumers for its thick flesh,juicy and delicious taste,and fragrant aroma.But the perishability of peach fruits increases the difficulty of their storage,circulation,and trading.This article introduced the physiological changes of peach fruit after harvesting,including respiration,ethylene release,enzyme activity,composition,and texture.It summarized the latest preservation methods based on physical,chemical,and biological preservation regulation technologies.It roposed that dynamic comprehensive regulation preservation technology would be the main trend for future industry development,in order to explore methods suitable for peach fruit storage and transportation preservation,and provide scientific suggestions for related industries.
