Determination and Application of Furfural Substances in Honey Products by High Performance Liquid Chromatography
A high performance liquid chromatographic method for the simultaneous determination of 5-hydroxymethylfurfural,furfural and 5-methylfurfural in honey products was established.Baseline separation of these analytes was achieved within 15 min.The linear ranges for 5-hydroxymethylfurfural,furfural and 5-methylfurfural were in the ranges of 0.10-300.00 mg/kg,with correlation coefficients(r2)of 0.9998,0.9999,0.9997,respectively.The detection limits(S/N = 3)for three analytes were 24.6 μg/kg,38.3 μg/kg,51.5 μg/kg,respectively.The recoveries at spiked concentration of 0.10-10.00 mg/kg were 92.4%-103.0%.The proposed method has the merits of easy operation,fast analysis and accurate results,and is suitable for the simultaneous determination of 5-hydroxymethylfurfural,furfural and 5-methylfurfural in honey products.At the same time,this paper discusses the effects of temperature change and storage time on the content of furfural in honey products,and concludes that the temperature control should be paid attention to during the thermal processing.And honey products are not suitable for long-term storage under high temperature conditions.
