摘要

本研究建立了一种高效液相色谱方法,可同时测定蜂蜜产品中糠醛类物质(5-羟甲基糠醛、糠醛、5-甲基糠醛).该方法在15 min内即可实现3种目标物的分离,5-羟甲基糠醛、糠醛和5-甲基糠醛的线性范围为0.10~300.00 mg/kg,相关系数(r2)分别为0.9998、0.9999和0.9997;检出限(S/N = 3)分别为24.6 μg/kg、38.3 μg/kg、51.5 μg/kg;加标水平为0.10~10.00 mg/kg时,3种目标物的回收率为92.4%~103.0%.该方法操作简便、分析快速、结果准确,适用于蜂蜜中 5-羟甲基糠醛、糠醛、5-甲基糠醛的检测.同时,本研究探讨了温度变化、储存时间对蜂蜜中糠醛类物质含量的影响,结果表明蜂蜜产品的热加工处理过程中要注意温度的控制,且蜂蜜产品不适合在高温条件下长时间储存.

Abstract

A high performance liquid chromatographic method for the simultaneous determination of 5-hydroxymethylfurfural,furfural and 5-methylfurfural in honey products was established.Baseline separation of these analytes was achieved within 15 min.The linear ranges for 5-hydroxymethylfurfural,furfural and 5-methylfurfural were in the ranges of 0.10-300.00 mg/kg,with correlation coefficients(r2)of 0.9998,0.9999,0.9997,respectively.The detection limits(S/N = 3)for three analytes were 24.6 μg/kg,38.3 μg/kg,51.5 μg/kg,respectively.The recoveries at spiked concentration of 0.10-10.00 mg/kg were 92.4%-103.0%.The proposed method has the merits of easy operation,fast analysis and accurate results,and is suitable for the simultaneous determination of 5-hydroxymethylfurfural,furfural and 5-methylfurfural in honey products.At the same time,this paper discusses the effects of temperature change and storage time on the content of furfural in honey products,and concludes that the temperature control should be paid attention to during the thermal processing.And honey products are not suitable for long-term storage under high temperature conditions.
