Development of a UHPLC-MS/MS Method for the Detection of Anthocyanins in Red Flesh Kiwifruit
This study established a method for the determination of cyanidin,delphinidin,petunidin,malvidin,peonidin,and pelargonidin in red flesh kiwifruit using ultra high-performance liquid chromatography-tandem mass spectrometry(UHPLC-MS/MS).Samples were directly extracted with a methanol aqueous solution containing 0.1%formic acid and analyzed using electrospray ionization(ESI)in positive ion mode with selected reaction monitoring(SRM).The results showed good linearity within the concentration range of 5-500 ng/mL,with linear correlation coefficients(r)above 0.997.The recovery rates were between 65.0%and 99.6%,precision ranged from 4.1%to 9.1%,and the limits of detection and quantification were 0.0003 mg/kg and 0.001 mg/kg,respectively.The method demonstrated its capability for the content determination of six anthocyanin compounds in red flesh kiwifruit,characterized by simplicity,efficiency,accuracy,high sensitivity,and good repeatability.
