用酸性溶液浸提法提取三明市野生蕉紫色果皮花青素,pH示差法测定花青素含量.结果表明,以1％盐酸-甲醇为提取液,平衡时间80分钟,测得三明市野生蕉紫色果皮中的花青素含量为矢车菊花青素苷5.43 mg/100 g.
Determination of Anthocyanins in the Peel of Wild Banana by pH-Differential Method
Pigments were extracted from the purple peel of wild banana in Sanming city by acid solution and the content of authocyanin was determined by pH-differential method.The results showed that the content of cyanidin 3-glucoside in the wild banana peel was 5.43 mg/100 g by using 1％ HCl-methanol as solvent,and buffering for 80 minutes after extraction.
