摘要

为了挖掘云和雪梨营养素的特异性,探究云和雪梨的营养保健功能,以云和雪梨和其他23个梨品种为试验材料,连续2年对果实糖、酸、总酚、总黄酮等营养素指标进行测定和比较分析.结果表明,云和雪梨与其他23个品种相比,部分矿物质元素含量、蔗糖、奎宁酸等含量相对较高;矿物质元素中K、Na和P元素含量在所测24个品种中皆为第1,Zn元素第2;蔗糖含量在所测24个品种中排名第4;奎宁酸含量排名第5;总酚含量排名第10.云和雪梨相比于其他品种,矿物质元素含量极其丰富,尤其富含K、Na、P和Zn等重要元素.本研究为云和雪梨品牌设计、开发利用、产业创新和高品质果业发展提供参考依据.

Abstract

To explore the specificity of nutrients in Yunhexueli pear,investigate its nutritional health function,Yunhexueli'and 23 other representative local pear varieties were used as test materials,and the nutrient index including fruit sugar/acid,total phenol,total flavonoids,etc.,were measured and comparatively analyzed for two consecutive years.The results showed that compared with the other 23 varieties of snow pear,Yunhexuli had relatively higher contents of certain mineral elements,sucrose,quinic acid,etc.Among the mineral ele-ments,the contents of K,Na,and P ranked the first among the 24 varieties tested,Zn ranked second.The content of sucrose ranked the fourth,and the quinic acid content ranked the fifth,and the total phenol content ranked the tenth.Compared with other varieties,Yunhexueli was extremely rich in mineral elements,especial-ly in important elements such as K,Na,P,and Zn.This study provides a reference for the brand design,de-velopment and utilization,industrial innovation,and high-quality industry development of Yunhexueli.
