Research on antioxidant and antibacterial activity of polysaccharide in Ophiura kinbergi
With Ophiura kinbergi in Huanghai Sea as raw materials, after degreasing and deproteinization, the polysaccharide in O.kinbergi was obtained by alkali extraction method. The capacity of scavenging free radicals of polysaccharide solution was measured by Fenton reaction and pyrogal1ol autoxidation method. The inhibiting effect of O.kinbergi polysaccharide on Escherichia coli, Staphylococcus aureus, Saccharomyces cerevisiae Hansen and Penicillium glaucum was measured by filtering paper method. The results showed that the O.kinbergi polysaccharide had good scavenging effect on hydroxyl radical (·OH) and superoxide anion radical (O2-·), and the clearance rate showed dose-effect relationship with polysaccharide solution. The maximum clearance rates of ·OH and O2-· of polysaccharide were 45.68% and 40.47%, respectively, which showed that the O.kinbergi polysaccharide had a certain antibacterial activity, but it was less than the antibacterial activity of VC in the same concentration. The O.kinbergi polysaccharide had good antibacterial activity on E.coli, S.aureus and S.cerevisiae Hansen. The diameters of antibacterial circle were 13.46 mm,14.12 mm and 14.73 mm, but it had no antibacterial activity on P.glaucum.The study indicated the O.kinbergi polysaccharide had good antioxidant effect and antibacterial activity.
