Effects of Chinese medicinal materials addition on quality of Green-covering Guanyin Tuqu and correlation analysis
In order to investigate the effect of adding Chinese medicinal materials on the quality of light-flavor(Qingxiangxing)Baijiu Jiuqu,10 Chinese medicinal materials with different addition were added into the Green-covering Guanyin Tuqu during preparation process.The quality indexes and storage time of Green-covering Guanyin Tuqu prepared with different addition of Chinese medicinal materials were analyzed,and the correlation be-tween Chinese medicinal materials addition and quality indexes of the Green-covering Guanyin Tuqu was explored.The results showed that the Tuqu prepared with 5.0%Chinese medicinal materials addition had a better bubble degree,red color of Qu heart,a small amount of black heart,and suitable medicinal taste.The quality of the Tuqu was better when stored for one month,the moisture,acidity,amino acid nitrogen,saccharification rate and fermentation rate were 4.56%,0.41 mmol/10 g,0.27 g/kg,31.2 g/100 g,and 35.9%,respectively.The number of lactic acid bacteria,yeast,and mold was 163.5×106 CFU/g,280.5×106 CFU/g,and 2.0×106 CFU/g,respectively.The enzyme activities of saccharase,amylase,and acid protease were 1 217.7 U/ml,50.6 U/ml and 44.0 U/ml,respectively.The correlation analysis showed that there were significant positive correlations among Chinese medicinal ma-terials addition,moisture,acidity and fermentation rate(P<0.05),and there were significant negative correlations between these four indexes and amylase activity(P<0.05).There was a significant negative correlation between the mold number and Chinese medicinal materials addition and water(P<0.05).
