青梅蛹虫草发酵酒的品质分析及保健效果研究

该研究以青梅和蛹虫草为原料制备了一种新型青梅蛹虫草发酵酒,对其理化指标、酒精度、感官评分以及总酚、总黄酮、氨基酸、矿物质、挥发性风味物质等指标进行检测分析,并对其体外抗氧化、降血脂和降血糖的能力以及对人肝癌细胞(HepG2)和结肠癌细胞(HCT116)增殖的抑制效果进行评价。结果表明,青梅蛹虫草发酵酒酒精度为12。65%vol、感官评分为93。02分、理化及微生物指标符合《绿色食品果酒》标准;酒体富含6种矿物质元素(钾、钙、镁、锌、铜、铁),17种氨基酸,共检出37种挥发性风味成分;对ABTS+自由基和DPPH自由基清除率分别为(96。58±1。19)%和(94。15±0。24)%,具有较强的抗氧化效果;青梅蛹虫草发酵酒冻干粉溶液对牛磺胆酸钠的结合率为(65。50±1。24)%,对α-葡萄糖苷酶的抑制率为(83。52±0。23)%,说明其能够有效降低血脂和血糖,对HepG2和HCT116癌细胞的增殖抑制率分别为(83。16±0。54)%和(75。94±2。18)%,表现出良好的抑制效果。总之,青梅蛹虫草发酵酒是一款富含丰富营养成分且具有多重保健效果的功能饮品。
Quality analysis and health effects of green plum and Cordyceps militaris fermented wine
A new type of green plum and Cordyceps militaris fermented wine was prepared,its physicochemical indexes,alcohol content,sensory score,total phenols,total flavonoids,amino acids,minerals,and volatile aroma components were detected and analyzed,and its antioxidant,hypolipidemic and hypoglycemic abilities in vitro,as well as its inhibitory effect on the proliferation of human hepatocellular carcinoma cells(HepG2)and colorectal carcinomas cells(HCT116)were evaluated.Results showed that the alcohol content of green plum and C.militaris fermented wine was 12.65%vol,the sensory score was 93.02 points,and the physicochemical and microbial indexes met the"green food fruit wine"standards.The wine was rich in 6 minerals(potassium,calcium,magnesium,zinc,copper,iron)and 17 amino acids,and a total of 37 volatile components were detected.The scavenging rates on ABTS+and DPPH free radicals were(96.58±1.19)%and(94.15±0.24)%,exhibited a strong antioxidant effect.The binding rate of green plum and C.militaris fermented wine freeze-dried powder solution to sodium taurocholate was(65.50±1.24)%and the inhibition rate of α-glucosidase was(83.52±0.23)%,indicating that it could effectively reduce blood lipids and blood glucose.The proliferation inhibition rates on the HepG2 and HCT116 cancer cells were(83.16±0.54)%and(75.94±2.18)%,showing a good inhibitory effect.In summary,the green plum and C.militaris fer-mented wine was a functional drink with rich nutrients and multiple health effects.
