Differential analysis of fungal community diversity in three pickled melons from Dongfang,Hainan
The Hainan Dongfang melon samples(XG,HLG,HMG)were pickled using watermelon,cucurbit and cantaloupe as raw materials,and the fungal community diversity was analyzed using Illumina Nextseq 2000 high-throughput sequencing technology.The results showed that the richness of fungal community in the sample HLG was the highest,and diversity of fungal community in the sample XG was the highest.A total of 432 fungal operational taxonomic units(OTUs)were classified in the three Dongfang pickled melon samples,belonging to 3 phyla,14 classes,26 orders,47 fami-lies and 68 genera.The fungi were mainly distributed in the Ascomycota in three Dongfang pickled melon samples,and the main bacterial genera in-cluded Kodamaea,Kazachstania,Pichia,unclassified_f Saccharomycetales_fam_Incertae_sedis,Candida,Diutina,Penicillium,Trichosporon,De-baryomyces,unclassified_o_Saccharomycetales,and so on.There were differences in the fungal community structure of the three Dongfang pickled melon samples,which were mainly reflected in 10 fungal genera,such as Kazachstania,Debaryomyces,Kodamaea and Candida.The results provided theoretical basis and scientific support for standardized and industrial production and food quality and safety control of pickled melon in Dongfang,Hainan.
