Research progress on quality identification of Baijiu Daqu
Daqu is a saccharification fermentation starter for Baijiu brewing,which provides complex and diverse enzymes,flavor(precursor)substances and microorganisms for fermentation.The Daqu quality directly determines base liquor quality.At present,there have been many relevant studies on Daqu quality identification.The main methods of Daqu quality identification were summarized,including traditional method,microbial diversity method,flavor substance method,spectral analysis method,etc.,in order to provide reference and guidance for Daqu quality identification and im-provement.
