链格孢毒素主要是由链格孢霉(Alternaria)产生的次生代谢产物,在世界各地的食品中广泛存在,对人类健康构成严重威胁.因此,解析其毒性和发现危害防控措施已成为 目前的研究重点.本文主要概述了食品中常见4种链格孢毒素的毒性、暴露风险、污染控制和毒性干预方法等,旨在为链格孢毒素的风险评估、安全限量标准和防控措施的制定提供参考,对保障食品安全和人类健康具有重要意义.
Research progress on hazards and control measures of Alternaria toxin in food
Alternaria toxin,a secondary metabolite produced by Alternaria,is widely found in food products all over the world and poses a crucial threat to human health.Therefore,the analysis of toxicity and the search for prevention and control measures of the toxin,have become the focus of current research.This study mainly summarizes the toxicity,exposure risk,pollution control,and toxicity intervention methods of four common Alternaria toxins.It provides chain spore mold toxin risk assessment,safety evaluation standards,and a reference for the establishment of prevention and control measures to ensure food safety and preserve human health.
