大球盖菇是联合国粮食及农业组织(Food and Agriculture Organization of the United Nations,FAO)向发展中国家推荐栽培的食用菌品种,其营养物质含量丰富、栽培技术简单、生产成本低、经济效益高.近年来,大球盖菇栽培技术在国内发展迅速,市场前景广阔,但存在鲜品保存时间短、不易储存等问题,严重影响了产品的品质和销售.采用适宜的采后加工工艺可延长食用菌产品的保存期,拓宽销售渠道,均衡市场供应.通过对大球盖菇采后加工工艺的研究进展进行综述,并探讨其发展方向,为今后大球盖菇采后加工工艺的开发利用提供参考.
Research Progress and Development Direction of Postharvest Processing Technology of Stropharia rugosoannulata
Stropharia rugosoannulata is one of the edible fungi recommended by the Food and Agriculture Organization of the United Nations(FAO)to cultivate in developing countries.Its nutrient content is rich,cultivation technique is simple,cost of production is low and economic benefits is high.The cultivation technology of S.rugosoannulata develops rapidly in our country in recent years and has broad market prospects,but it has the problems of short preservation time and difficult storage which af-fects the quality and benefits seriously.Adopting appropriate processing technology can prolong the shelf-life of the edible fungi products,broaden marketing channels and balance the market supply.The research progress of postharvest processing technolo-gy of S.rugosoannulata was reviewed,and the future research was proposed to provide a reference for the exploitation and uti-lization of postharvest processing technology.
