Edible fungi is rich in abundant nutritional material and contains active material such as polysaccharide,amino acid,polypeptide protein,which have the effect of anti-tumor,antioxidise,moisture retention and immune regulation.The application situation of moiture retetion of edible fungi polysacchrides were summarized,so as to provide references for further applied de-velopment of edible fungi polysaccharides.
