栽培料总硒浓度对秀珍菇产量、品质及产品安全性的影响

以4个秀珍菇菌株为试验材料,探索栽培料总硒浓度对秀珍菇产量及子实体硒含量、营养成分、重金属含量的影响.结果表明,栽培料总硒浓度直接影响秀珍菇子实体硒含量,随总硒浓度增加,子实体硒含量升高;总硒浓度为 0.07~1.47 mg·kg-1 时,子实体硒含量在《富硒农产品》(GH/T 1135-2017)规定范围内,硒未超标,产品安全;总硒浓度为 0.22 mg·kg-1 时,供试菌株的生物学效率均较高;总硒浓度增加可以提高秀珍菇子实体粗蛋白含量;栽培料总硒浓度增加时,子实体的砷、镉、铅含量不会相应增加,富集的硒与砷、镉、铅也不会产生协同作用.
Effect of Selenium Concentration in Cultivated Material on Yield,Quality and Product Safety of Pleurotus pulmonarius
The effects of total selenium concentration of cultivated material on yield,selenium content,nutrient composition and heavy metal content of fruit body were studied with 4 strains of Pleurotus pulmonarius as experimental materials.The results showed that the total selenium concentration of cultivated materials directly affected the selenium content in fruit body of P.pulmonarius,and the selenium content in fruit body increased with the increase of total selenium concentration.When the total selenium concentration was 0.07-1.47 mg·kg-1,the selenium content in the fruit body was within the specified range of Seleni-um-rich agricultural products(GH/T 1135-2017),the selenium was not exceeded,and the product was safe.When the total sele-nium concentration was 0.22 mg·kg-1,the biological efficiency rate of the tested strains was higher.With the increas of total se-lenium concentration,the crude protein content of P.pulmonarius fruit body could be increased.The content of arsenic,cadmi-um and lead in fruit bodies did not increase with the increase of total selenium concentration,and there was no synergistic effect between enriched selenium and arsenic,cadmium and lead.
