摘要
食用菌产业是一种大食物观产业.食用菌因其丰富的营养以及独特的风味被消费者所喜爱,随着人们的生活水平不断提高,饮食观念的不断变化和新加工技术的运用,食用菌休闲食品不断地推陈出新,但实际品种单一,食用菌功效成分的优越性未能得到良好体现,产品附加值不高.通过对食用菌休闲食品的研究现状进行综述,为产生出品质优良、营养丰富的各种食用菌产品提供参考.
Abstract
The edible fungi industry is a new food industry.The edible fungi are loved by consumers because of their rich nutri-tion and unique flavor.With the improvement of people's living standard,the change of diet concept and the application of new processing technology,the leisure food of edible fungi is constantly changing,but the actual variety is single and the supe-riority of the functional ingredients of edible fungi can not be well reflected,so the added value of the products is not high.By summarizing the research status of edible fungi leisure food,in order to provide reference for producing various edible fungi products with good quality and rich nutrition.
