Polysaccharide is one of the important bioactive components of Flammulina velutipes,which has the functions of im-mune regulation,anti-oxidation,anti-inflammatory,anti-fatigue,etc.Therefore,the efficient extraction,separation and purifica-tion of F.velutipes polysaccharide has been a hot research issue in the industry.By reviewing the research progress of the bio-logical activity of F.velutipes polysaccharide,and summarizing the optimization process of polysaccharide extraction,separation and purification,in order to provide a selection list of the best extraction and purification process for the research and production of F.velutipes polysaccharide,and lay a foundation further process improvement and development of deep processing products.
