Study the application of yeast extract in sauce,the results show that adding appropriate amount of yeast extract into sauce can inhibit the unpleasant smell of sauce,increase the flavor,moderate the acidity,and reduce saltiness and bitterness.Yeast extract also can give strong flavor to sauce,increase the mellow flavor of sauce,lengthen the duration of sauce flavor,and make sauce delicious.This study shows that yeast extract has the function of improving the whole flavor of sauce.
