研究了酵母抽提物在酱中的应用,经研究发现,将酵母抽提物适量添加到酱中,可以抑制酱的不愉快气味,有增加鲜味、缓和酸味、淡盐、降低苦涩味等矫味作用,赋予酱浓郁香味,加大酱醇厚味的表现力,延长酱味道的持续时间,使之更加美味可口,说明酵母抽提物具有提升酱整体风味的作用.
The Application of Yeast Extract in Sauce
Study the application of yeast extract in sauce,the results show that adding appropriate amount of yeast extract into sauce can inhibit the unpleasant smell of sauce,increase the flavor,moderate the acidity,and reduce saltiness and bitterness.Yeast extract also can give strong flavor to sauce,increase the mellow flavor of sauce,lengthen the duration of sauce flavor,and make sauce delicious.This study shows that yeast extract has the function of improving the whole flavor of sauce.
