Research Progress of Nitrite Scavengers and Their Application in Meat Products
Nitrite plays an important role in the food industry,especially in the meat processing industry,which has antibacterial,antioxidant effects and can give meat products special flavor and form color.However,if the intake of nitrite exceeds the normal range,it will cause insufficient oxygen in the body tissues,and can also form nitrosamines and eventually cause cancer.However,no single substance has been found to replace nitrite at present.Therefore,effective control of nitrite content in meat products has great significance.In this paper,the effect of nitrite on food safety is discussed,by overviewing natural substances with nitrite scavenging effects extracted from vegetables and fruits and their application in meat products,which has provided theoretical references for the research on the substances with nitrite scavenging effects in reducing nitrite content in meat products.
