Study on Aroma Components and Sensory Analysis of Essential Oils of Fennels from Six Different Places of Origin
Fennel essential oil is a kind of natural volatile oil extracted from fennel plant.It is widely used as a spice and medicine,and has been proven to have various bioactive components,such as antioxidants and anti-inflammatory agents.However,the smell and chemical components of fennel essential oil are different due to the factors such as planting location,climate and growth conditions.Based on this,GC-MS and GC-O are used in this study to determine and analyze the aroma components of essential oils of fennels from six different places of origin.The results show that a total of 30 aroma components are identified in essential oils of fennels from six different places of origin,among which,there are 21,28,27,26,22,22 aroma components in samples A,B,C,D,E,F respectively.Among the fennel samples from six places of origin,the types of aroma components of terpenes are the most,including 16 types(total aroma components of 30 types),accounting for 53.3%of the total number of aroma substances,among which,the content of limonene,phellandrene,δ-cadinene,terpinene andα-pinene in terpenes is significantly higher than that of other terpenes.Studying the aroma components of essential oils of fennels from different places of origin can help understand the chemical components of essential oils of fennels from different places of origin,so as to determine their unique odor characteristics and potential uses.
