Non-Volatile Components and Research Progress of Shanxi Aged Vinegar
Shanxi aged vinegar is one of four kinds of famous vinegar in China.With the development of modern science and technology,people have found that vinegar contains a variety of nutrients and bio-active components,including organic acids,amino acids,carbohydrates and other non-volatile components,which give Shanxi aged vinegar the taste of sourness,umami and sweetness,and have health care functions.In this paper,the composition,functions,influencing factors and analysis methods of non-volatile components in Shanxi aged vinegar are mainly reviewed,which helps to deepen the scientific understanding of Shanxi aged vinegar and provides a certain theoretical basis for subsequent related research.
