Optimization of Extraction Process and Anti-Fatigue Activity of Perilla Seed Protein
Perilla seed is rich in protein and amino acids,and has high development value.In this study,single factor test and orthogonal test are used to study and optimize the extraction process of perilla seed protein.The research results show that the optimal extraction process of perilla seed protein is solid-liquid ratio of 1∶20,alkaline extraction pH of 10,alkaline extraction time of 20 min and alkaline extraction temperature of 50 ℃.At this time,the extraction rate of perilla seed protein is the highest of 54.25%.Through the multiple regression fitting analysis of orthogonal test data by Design-Expert 12 software,the regression model of perilla seed protein extraction process parameters is obtained as Y=53.12+0.45A+1.19B+1.39C-0.051AB+1.61AC-1.37BC-2.41A2-0.81B2-2.21C2,the P value of this model is<0.001,and the error between the test value and the true value is very small.In addition,the anti-fatigue biological activity of perilla seed protein is also studied,and the results show that the appropriate amount of perilla seed protein has good anti-fatigue activity.
