Study on Formation,Characteristics and Application of Lactic Acid Bacteria Biofilms
Most lactic acid bacteria are well known as probiotics and widely used in the field of food.Biofilms are the natural growth state of bacteria in response to adverse environments.In recent years,relevant studies have revealed the formation regulation and excellent characteristics of lactic acid bacteria biofilms,and the application of lactic acid bacteria biofilms in production has been preliminarily explored.In order to further regulate and utilize lactic acid bacteria biofilms,it is necessary to study and understand lactic acid bacteria biofilms in depth.In this paper,the formation of lactic acid bacteria biofilms,the roles of cell adhesion extracellular polymer in the biofilm formation,as well as the formation of mixed-bacteria biofilms of lactic acid bacteria and yeast and the interactions between yeast and lactic acid bacteria are reviewed,and the application of lactic acid bacteria biofilms in stress resistance,bacteriostat,food production,human health and other aspects is introdiced,so as to provide assistance for people to understand lactic acid bacteria biofilms and further research and apply them.
