Bioprotection Effect of Ectoine and Its Application in Food Field
Ectoine is a protective compatible solute,and can protect biomacromolecules and cells from adverse environmental conditions such as high temperature,extreme pH,drying,freezing,radiation and so on.Therefore,ectoine can be used in the development of new food additives,and can be widely used in enzyme protection,fermentation bacteria protection,food shelf life extension and functional food development and other aspects during food production and processing.Based on the research status at home and abroad in recent years,the biosynthesis-degradation pathway,bioprotection mechanism and application of ectoine have been discussed,with emphasis on its application in food field,in order to provide references for the research,development and application of ectoine compatible solutes in food field.
