Study on Risk Control of Salted Cod Products Exported to Brazil
Salting is a traditional way of fish fillet processing and storage.Salted cod is a product with complex technology and high added value among China's exported aquatic products.Brazil and Portugal have the largest consumption quantity.However,from 2014 to 2020,the export volume of salted cod products to Brazil declined sharply,mainly due to the strict official inspection and production system,strict laws and regulations,strict registration content and so on.There is a dispute between Brazil and Chinese enterprises on the hazard analysis and critical control point plan of salted cod.In this paper,the effects of salt,moisture and water activity on the critical control point are analyzed,the registration process in Brazil is studied,and the suggestions on the establishment of the hazard analysis and critical control point plan of salted cod are put forward,which is of great significance to improve the production control level of salted cod and promote the export of salted cod to Brazil.
