Study on in Vitro Digestion and Fermentation Rules,Nutritional Properties and Functional Application of Bound Polyphenols in Carrot Dietary Fiber
Dietary fiber is an important carrier of polyphenolic compounds,which can promote intestinal peristalsis and maintain intestinal microecological balance.By combining with polyphenols,polyphenols can be guided into intestines and play an important role in the intestinal environment.Previous researches have focused on extractable polyphenols in dietary fiber,and there are few reports on bound polyphenols.Based on this,in this study,enzymatic hydrolysis method is used to extract dietary fiber from carrots,and the effects of in vitro digestion and colonic fermentation on the content,components and antioxidant activity of bound polyphenols in carrot dietary fiber are studied.The results show that compared with in vitro fermentation,more bound polyphenols are released from carrot dietary fiber during colonic fermentation.In addition,the bound polyphenols released from carrot dietary fiber after small intestinal digestion have a significant inhibitory effect on the activity of α-amylase and α-glucosidase.
