Research Progress on Extraction,Structural Characteristics and Bioactivity of Lentinula edodes Polysaccharides
Lentinula edodes belongs to Basidiomycetes.It is one of the most widely cultivated mushrooms in the world,and it is famous for its dual use of food and medicine.Lentinula edodes is rich in polysaccharides,vitamins,trace elements and other nutrients.It has high nutritional and medicinal value and is deeply loved by consumers.Polysaccharides extracted from the fruit bodies of high-quality Lentinula edodes are active components that play a main role in their physiological functions.A large number of studies have shown that Lentinula edodes polysaccharides have many bioactivities such as anti-inflammation,antioxidation and anti-cancer.Lentinula edodes polysaccharides have been widely used in the field of food and medicine due to their good hydrophilicity,environmental protection,non-toxicity,harmlessness and easy availability of raw materials.Studying the extraction,structural characteristics and bioactivity of Lentinula edodes polysaccharides and predicting the research and development trends are very important for the research and development of related food and pharmaceutical products and their practical technical application.
