苦笋是我国众多可食竹笋中极具特色的一种优质竹笋,其风味独特、苦后回甘,具有抗氧化、抗炎、抗肿瘤、降血糖等多种生理活性,是广受消费者喜爱的一种保健蔬菜.文章对苦笋中的主要生理活性物质进行了总结综述,包括蛋白质、氨基酸、多酚、生物碱、多糖、甾醇、膳食纤维等,并对其潜在的功能活性进行了重点论述.文章总结了近年来国内外对苦笋中生理活性物质的研究进展和成果,以期为苦笋的生理活性研究和相关功能性食品的开发提供理论指导.
Research Progress of Physiological Active Substances of Pleioblastus amarus Shoots
Pleioblastus amarus shoots are a kind of high-quality bamboo shoots with great characteristics among various edible bamboo shoots in China.They have unique flavor,bitterness but with sweetness aftertaste,and various physiological activities such as antioxidation,anti-inflammation,anti-tumor,hypoglycemic effect,etc.,which are a kind of health vegetable widely loved by consumers.In this paper,the main physiological active substances in Pleioblastus amarus shoots are summarized and reviewed,including protein,amino acids,polyphenols,alkaloids,polysaccharides,sterols,dietary fiber,etc.,and their potential functional activities are emphatically discussed.The research progress and results of physiological active substances in Pleioblastus amarus shoots at home and abroad in recent years are summarized,in order to provide theoretical guidance for the study on physiological activities of Pleioblastus amarus shoots and the development of related functional foods.
