Study on Nutrients and Antioxidant Activity of Polypeptides in Yak Milk Residues
Yak milk residues contain a variety of nutrients and minerals,which are essential for the growth and development of the human body. The nutrients and antioxidant activity of polypeptides in yak milk residues at three different altitudes are studied,and the results show that the nutrients in yak milk residues mainly include protein,fat,moisture,ash,vitamin D3,vitamin E,vitamin A and mineral elements such as Ca,Fe and P;the aroma components mainly include acids,alkenes,ketones,aldehydes,phenols,alcohols,benzenoid and other compounds;the nutrients and volatile components in yak milk residues at different altitudes are different to some extent,which is caused by the species and breeding environment of yaks. Yak milk residues have obvious scavenging effect on hydroxyl free radicals,superoxide and DPPH free radicals,and the antioxidant activity significantly increases when yak milk residues are enzymatically hydrolyzed by polypeptides. The study on polypeptides in yak milk residues is helpful to make full use of animal husbandry resources and improve the economic benefits of agriculture and animal husbandry.
