Analysis of pollution status of lead, cadmium, mercury and arsenic in some food sold in Taizhou city from 2020 to 2022
Objective This paper aims to understand the pollution status of lead, cadmium, mercury and arsenic in some food sold in Taizhou City,so as to provide basis for the supervision and administration of food safety. Methods According to the demands of relevant national standards, six categories of food were collected and the contents of lead, cadmium, arsenic and mercury were detected from 2020 to 2022,and the results were statistically analyzed. Results A total of 815 samples has been tested for three years, the lowest qualified rate was observed in cadmium(91.29%),followed by lead(99.75%),arsenic(95.46%)and mercury(100.0%),and the difference in the qualified rate was statistically significant(P<0.05).The detection rates of lead, cadmium, mercury and arsenic in the six categories of food were cadmium(79.51%),arsenic(73.01%),lead(46.01%)and mercury(23.07%)from high to low.Among the six categories of food, the highest excee-ding rate of cadmium(20.27%)was observed in aquatic products, followed by vegetables(5.26%),cereals(1.60%),meat and meat products(1.41%),bean products and tea(not exceeding the national standard). The aquatic products exceeding the cadmium standard were mainly shells, and the vegetables exceeding the cadmium standard were rhizomes. The samples with arsenic exceeding the standard were mainly aquatic products, and the exceeding rate was 12.71%.Lead in two samples excee-ded the standard in aquatic products, and mercury did not exceed the standard. Conclusion The levels of lead, cadmium, mercury and arsenic in food sold in Taizhou are relatively safe.Cadmium and arsenic pollution exists in a certain range, which should be paid attention to and supervision should be strengthened.
