摘要
比较悬液法和载体法检测消毒剂的杀菌效果.在相同条件下采用悬液定量法(清洁条件下和含有机干扰物条件下)和载体定量法,比较3种消毒剂对食品中3种典型细菌的杀灭效果.结果表明不同方法检测消毒剂的杀菌效果存在差异,采用悬液定量法在清洁条件下杀菌效果较好,载体定量法次之,悬液定量法在加有有机干扰物条件下杀菌效果较差.
Abstract
Objective:To compare the bactericidal effect of disinfectants detected by suspension method and carrier method.Methods:The killing effect of three disinfectants on three typical bacteria in food was compared by suspension quantitative method(under clean condition and under condition with organic interference)and carrier quantitative method under the same conditions.Results:Under cleaning conditions,the concentration of 50 mg/L peroxyacetic acid,chlorine dioxide and quaternary ammonium salt for 2min,the killing value of Enterobacter sakazakii and Vibrio vulnificus were>5.00,The concentration of 100 mg/L peroxyacetic acid,chlorine dioxide and quaternary ammonium salt for 2min,and the killing value of Clostridium perfringens was>5.00;Under the condition of organic interference,the concentration of 100 mg/L peroxyacetic acid,chlorine dioxide and quaternary ammonium salt for 2min,the killing value of Enterobacter sakazakii was>5.00,the concentration of 50 mg/L peroxyacetic acid,chlorine dioxide and quaternary ammonium salt for 2min,the killing value of Vibrio vulnificus was>5.00,respectively.The concentration of 200 mg/L peroxyacetic acid,chlorine dioxide and quaternary ammonium salt for 1min,and the killing value of Clostridium perfringens was>5.00;Under the conditions of the carrier quantitative method,the concentration of 100 mg/L peroxyacetic acid,chlorine dioxide and quaternary ammonium salt for 2min,the killing value of Enterobacter sakazakii was>5.00,the concentration of 50 mg/L peroxyacetic acid,chlorine dioxide and quaternary ammonium salt for 1min,the killing value of Vibrio vulnificus was>5.00,respectively.The concentration of 200 mg/L peroxyacetic acid,chlorine dioxide and quaternary ammonium salt for 1min,and the killing value of Clostridium perfringens was>5.00.Conclusion:Different methods exhibit variations in the sterilization efficacy of disinfectants.The suspension quantification method has the best sterilization effect under cleaning conditions,followed by the carrier quantification method,and the suspension quantification method is the worst under the condition of containing mechanical interference substances.
