纤维素酶的酶学特性及在畜禽生产中的应用研究进展

纤维素是植物性饲料原料中一类常见的抗营养因子,纤维素的存在使多种非常规原料在动物生产中的应用受到限制。纤维素酶作为糖苷水解酶家族成员之一,主要包括3种类型,即内切葡聚糖酶、外切葡聚糖酶、β-葡萄糖苷酶。单胃动物机体内往往不能分泌纤维素酶,一般通过外源添加纤维素酶消化摄入的纤维素。因此,在饲粮中添加适宜水平的纤维素酶,可将植物性原料中纤维素降解为葡萄糖等可溶性糖,消除饲粮中的抗营养因子,提高营养物质的消化率和动物生产性能。因此,纤维素酶在畜禽生产中具有重要意义。本文主要从纤维素酶的酶学特性及在畜禽生产中的应用效果进行综述,为新型酶制剂产品的开发和应用提供参考。
Enzymatic Properties of Cellulase and Its Application in Livestock and Poultry Production
Cellulose is a common anti-nutritional factor in plant feed ingredients,the presence of cellulose limits the application of a variety of unconventional raw materials in animal production.As a member of the glycoside hydrolase family,cellulase mainly includes three types:endoglucanase,exoglucanase and β-glucosidase.Monogastric animals often cannot secrete cellulase,and cellulose is generally digested by exogenous addition of cellulase.Therefore,adding appropriate levels of cellulase to the diet can degrade cellulose in plant raw materials into soluble sugars such as glucose,eliminate anti-nutritional factors in the diet,and improve the digestibility of nutrients and animal production performance.Cellulase is of great significance in livestock and poultry production,therefore,this paper mainly reviews the mechanism,enzymatic characteristics and application effect of cellulase in livestock and poultry production,so as to provide reference for the development and application of new enzyme products.
