摘要

当前,区域特色家禽产品满足了消费者对多元化家禽产品的需求,但市场上以次充好、以假乱真等现象屡见不鲜,使得地域特色家禽资源及其产品的保护利用迫在眉睫.传统的感官评价方法大多为描述性指标,准确性相对较差.近年来,稳定同位素、矿物元素指纹分析、可见/近红外光谱溯源等现代分析技术在保证家禽及其产品身份的真实性和可判别性方面显现出巨大的应用潜力.本文综述了稳定同位素、矿物元素指纹分析、可见/近红外光谱溯源等技术的基本原理,以及这些技术在家禽及其产品产地溯源上的研究与应用,为家禽及其产品产地溯源体系的建立和完善提供支撑.

Abstract

At present,poultry products with regional specialty meet consumers'demand for diversified poultry products.However,the phenomenon of shoddy,fake and others are common in market,which makes it urgent for the protection and utilization of regional characteristic poultry resources and poultry products.Most of the traditional sensory evaluation methods are descriptive index,and the accuracy is not very good.In recent years,modern analytical techniques such as stable isotope,mineral elements fingerprint analysis,visible/near-infrared spectroscopy have shown great application potential in ensuring the authenticity and discriminability of the identity of poultry and its products.This article summarized the technology of stable isotope,mineral elements fingerprint analysis,visible/near-infrared spectroscopy and so on.Then it also summarized the research and application of these technologies in poultry and its products origin traceability,in order to provide support for the origin traceability system establishment and improvement of poultry and poultry products.
