“地沟油”鉴别技术研究展望

针对“地沟油”鉴别技术研究中的若干关键共性问题进行了分析与展望.“地沟油”内涵不统一,采用“餐厨废油脂”概念更准确.回流餐桌的“地沟油”都是二次油,深度氧化是其共同特征.餐厨废油脂中或不存在专有的特异性物质,依靠检测难以准确定性.餐厨废油脂是极不标准的研究对象,任何方法都不可能定量检测掺伪量.鉴别“地沟油”采用油脂内源性的量差性指标与外源性的排除性指标相结合的多指标体系的检测方法是必然趋势.“地沟油”鉴别的快检技术与仲裁技术相互补充,但不可能先于仲裁技术而独立应用.现阶段有必要行政监管与技术监测并重,尽快开发应用技术难度相对较低的筛查方法.
Prospect on discerning technology of swill - cooked dirty oil
Several major common problems in the studies of discerning technology for swill -cooked dirty oil were analyzed and prospected. The conception of "swill - cooked dirty oil" was still not unified, so the conception of "waste cooking oil" was more accurate. Swill -cooked dirty oil was reused oil with the common feature of deep oxidation. Characteristic substance might not exist in the swill - cooked dirty oil, and its identity could hardly be determined by detection. Swill - cooked dirty oil was far from standard subject,and the adulteration could be quantitative detected by no means. Multiple - indicator system which combined endogenous quantity differences index with exogenous exclusive index was an inevitable trend. Fast identification technique for the swill - cooked dirty oil could complement the arbitration technology, but could not be put into application independently. Presently,it was necessary to pay equal attention to administrative supervision and the technical detection, and the screening detection technology should be developed and applied as soon as possible.
