The functional components of Akebia trifoliate see d oil were analyzed by GC-MS, atomic ab-sorption spectrometry and conventional analysis method, and its antioxidant activity was investigated by determining the peroxide value and free radical scavenging rate. The results showed that the acid value, saponification value and iodine value of Akebia trifoliate seed oil were 1 . 23 , 260 mgKOH/g and 83 . 02 gI/100 g, respectively; the fatty acid composition of Akebia trifoliate seed oil was mainly palmitic acid (30. 08%) and oleic acid(48. 93%), and the contents of potassium, sodium, calcium, magnesium and zinc in Akebia trifoliate seed oil were 2. 57, 5. 12, 3. 15, 0. 23, 0. 21 mg/g, respectively. Akebia trifoli-ate seed oil was added to sesame oil to be irradiated by UV at 235 nm for 450 min and heated at 80℃ for 60 min respectively,and the peroxide values of sesame oil decreased by 11. 46% and 16. 81% respective-ly compared with those of sesame oil added with BHT;the free radical scavenging rate of Akebia trifoliate seed oil was compared with that of sesame oil, VE , D-sodium isoascorbiate and BHT, and the results indicated that the reducing power and scavenging activities on superoxide anion free radical and H2 O2 of Akebia trifoliate seed oil were the strongest.
