Effect of Different Storage Methods on Quality of Caine Pineapple
In this paper,the effects of different storage methods on the quality of caine pineapple were studied by comparing and analyzing the differences of sensory evaluation,black heart rate,weight loss rate,soluble solid content and texture indexes of caine pineapple under room temperature,general refrigeration and air-conditioned storage.Studies have shown that air-controlled storage can delay the aging process of pineapple to a certain extent and maintain fresh quality.After 15 days of storage,there is no significant difference in sensory evaluation indexes between pineapple and fresh pineapple(P>0.05),black heart phenomenon will not appear,weight loss rate is only 4.49%,and soluble solid content changes steadily.The hardness and chewability were better than those of room temperature and general refrigeration group.In summary,air-conditioned storage can effectively maintain the quality of fresh pineapple,and can be used as an effective method for its preservation.
