摘要

近年来,随着食品添加、新式饮品发展的多元化需求,抹茶深受市场青睐,其良好的营养价值被广泛应用于食品添加、衍生产品和保健品开发,是茶产业新的增长方向.遵义市茶业规模大,可以生产六大茶类的茶叶产品,但是在抹茶发展上还处于起步阶段.该文综述抹茶国内外现状,罗列目前存在的主要问题,分析遵义发展抹茶在规模、品种、基地、企业方面的基础,提出强化抹茶生产基地建设、加工技术提升、产业集聚发展、产品研发开发和政策资金扶持等对策建议,以期为遵义茶产品开发、茶产业效益提升和高质量发展提供借鉴参考.

Abstract

In recent years,with the diversified demand of food addition and the development of new drinks,matcha is favored by the market,and its good nutritional value is widely used in food addition,derivative products and health products development,which is a new growth direction of tea industry.Zunyi tea industry has a large scale,which can produce six kinds of tea products,but the development of matcha is still in its infancy.This paper summarizes the current situation of matcha at home and abroad,lists the main existing problems,and analyzes the basis of the development of matcha in Zunyi in terms of scale,variety,base and enterprise.This paper puts forward some countermeasures and suggestions for strengthening the construction of matcha production base,the improvement of processing technology,the development of industrial agglomeration,product research and development,policy and financial support,in order to provide reference for the development of Zunyi tea products,the improvement of tea industry efficiency and the development of high quality.
