Analysis of components and contents of soluble sugars and organic acid in 51 Shandong hawthorn local varieties
51 Shandong local hawthorn varieties were used as test materials to determine the components and contents of organic acids and soluble sugars in ripe fruits by HPLC.The results showed that the soluble sugars in hawthorn fruit mainly included fructose,sorbitol,glucose and sucrose.Sucrose was the main sugar,accounting for 38.35%of the total sugar.Organic acids mainly include oxalic acid,tartaric acid,malic acid,acetic acid,citric acid and succinic acid,with the highest content of malic acid followed by succinic acid,accounting for 71.58%of the total acid content.The contents of total sugar and total acid in the fruits of 51 varieties varied significantly,ranging from 33.03 mg/g to 235.01 mg/g,and 3.60 mg/g to 109.96 mg/g,respectively.The ratio of sugar to acid was significantly different,and the coefficient of variation was 91.69%.
