摘要

以51个山东山楂地方品种为试材,利用高效液相色谱法(HPLC)对成熟果实的有机酸和可溶性糖组分和含量进行测定.结果表明:山楂果实中可溶性糖主要有果糖、山梨醇、葡萄糖和蔗糖,蔗糖含量最高,占总糖含量的38.35%;有机酸主要包括草酸、酒石酸、苹果酸、乙酸、柠檬酸和琥珀酸,苹果酸含量最高,琥珀酸次之,这两种酸含量占总酸含量的71.58%.51个山楂品种果实总糖含量为33.03~235.01 mg/g,总酸含量3.60~109.96 mg/g,糖酸比差别明显,变异系数为91.69%.

Abstract

51 Shandong local hawthorn varieties were used as test materials to determine the components and contents of organic acids and soluble sugars in ripe fruits by HPLC.The results showed that the soluble sugars in hawthorn fruit mainly included fructose,sorbitol,glucose and sucrose.Sucrose was the main sugar,accounting for 38.35%of the total sugar.Organic acids mainly include oxalic acid,tartaric acid,malic acid,acetic acid,citric acid and succinic acid,with the highest content of malic acid followed by succinic acid,accounting for 71.58%of the total acid content.The contents of total sugar and total acid in the fruits of 51 varieties varied significantly,ranging from 33.03 mg/g to 235.01 mg/g,and 3.60 mg/g to 109.96 mg/g,respectively.The ratio of sugar to acid was significantly different,and the coefficient of variation was 91.69%.
