Analysis of mineral elements content and aroma composition differences of 6 kiwifruit varieties from different regions
The differences in mineral element content and aroma composition in the fruits of 6 kiwifruit varieties('Jinyan','Jintao','Xuxiang','Cuiyu','Hongyang','Donghong')grown in different regions(Hunan,Sichuan,Guizhou,Zhejiang)were studied.The results showed that among the 8 mineral elements in kiwifruit,K,Ca,Mg and P content were relatively high,while Fe,Al,Zn and Mn content were relatively low;the average mineral element content is in the order of K>Ca>Mg>P>Fe>Al>Mn>Zn;the Ca,Mg and P content of the green meat varieties'Xuxiang'and'Cuiyu'fruits in Hunan region were higher than those in the other three regions,while the K,Fe and Al content of'Xuxiang'and'Cuiyu'fruits in Zhejiang region were higher than those in the other three regions;the Mg,P and Zn content in the'Cuiyu'fruit of four regions were significantly higher than those of the other five varieties.The correlation analysis results indicated that there is a highly significant positive correlation between Ca content and Mg,Zn and P content;there is a highly significant positive correlation between Mg content and Zn,P content;there is a significant positive correlation between Fe content and Zn content;there is a significant positive correlation between Al content and Mn content;there is a highly significant positive correlation between Zn content and P content.A total of 29 volatile substances were detected in the fruits of 6 kiwifruit varieties in four regions,including 12 aldehydes,7 esters,6 alcohols and 4 other substances.Among them,7 volatile substances were common components,namely(E)-2-hexenal,acetaldehyde,pentanal,hexanal,(E)-nonenal,ethyl acetate,and n-hexanol.The content of aldehydes was higher than that of other types,with(E)-2-hexenal having the highest content.
