蜂花粉口香糖的工艺研究

摘要
蜂花粉作为一种药食兼用的天然蜜蜂产物,因含有丰富的黄酮和酚酸类物质而具有抑菌、抗炎、抗龋齿等生物活性.本实验通过在口香糖包衣中添加油菜蜂花粉提取物,制成一种新型功能的口香糖.单因素和正交试验结果发现蜂花粉口香糖包衣配方的各物料质量配比为木糖醇∶阿拉伯胶∶麦芽糊精∶二氧化钛∶山梨糖醇∶蜂花粉提取物∶色素∶水=26.5∶2.5∶1.4∶0.4∶0.1∶0.6∶0.2∶68.3时,所得蜂花粉口香糖的香气纯正,适口感好,为蜂花粉口香糖包衣的最佳配方.
Abstract
Bee pollen,as a kind of natural bee product used in both medicine and food,has antibacterial,anti-inflammatory,anti-caries and other biological activities due to its rich flavonoid and phenolic acids.In this study,a new functional chewing gum was made by adding rape bee pollen extracts to chewing gum coating.The results of single factor and orthogonal test showed that the bee pollen gum coating formula had pure aroma and good taste when the ratio of each material was xylitol∶gum arabic∶maltodextrin∶titanium dioxide∶sorbitol∶bee pollen extract∶pigment∶water=26.5∶2.5∶1.4∶0.4∶0.1∶0.6∶0.2∶68.3,which was the best formula for bee pollen gum coating.
