摘要
茶色素因具有抗癌、阻燃、抗氧化、抗紫外、抑制炎症、降血脂等多种功能,以及良好的着色性能被广泛应用于食品、医疗以及纺织印染领域.本文综述了茶色素的结构和性质,以及提取和纯化工艺,对茶色素在食品、医疗及纺织领域的应用前景进行了展望,提出探索茶黄素、茶红素以及茶褐素的分离和具体结构,茶色素的稳定性将是未来的主要研究方向.
Abstract
Tea pigment is widely used in the fields of food,medicine,and textile printing and dyeing due to its anti-cancer,flame retardant,anti-oxidation,anti-ultraviolet,anti-inflammatory,hypolipidemic properties and other functions,as well as good coloring performance.This paper reviews the structure and properties of tea pigment,as well as its extraction and purification processes,discusses the potential application prospect of tea pigment in the food,medical,and textile fields and proposes that the exploration of the separation and specific structure of theaflavins,thearubigins,and theabrownins,and the stability of tea pigment is the main research direction.
