The gardenia yellow pigment is a mixture extracted from the fruit of the gardenia,mainly containing crocin and crocetin.It exhibits excellent coloration,wide pharmacological activity,and high safety.With the increasing concern for safety and health among people,the health industry is thriving,leading to a growing demand for natural pigments.As a result,the gardenia yellow pigment has promising application prospects in various fields such as food,fabrics and medicine.To gain insights into the current development status of gardenia yellow pigment and explore its potential for expanded application,this paper briefly reviews its properties,extraction technology,purification technology and application status.
